Serve with a salad and garlic bread for a nice, not to complicated Sunday dinner!










Mix spaghetti sauce with water, after arranging seam side down pour sauce over roll ups.




Cover with foil and bake.

Next spread mixture onto noodles and roll up.


After the water came to a rolling boil , I let the noodles boil about 10 min. then drained.

Meanwhile after heating oil-onion and broccoli remove from heat and stir in the egg-ricotta and parmesan.

Recipe




1-Box Lasagna Noodles
1-10 oz. pkg frozen chopped broccoli (thawed)
1- 24 oz. jar of spaghetti sauce
1-15 oz. container ricotta cheese
1- 8 oz. pkg shredded mozzarella cheese
1/4 cup of finely grated parmesan cheese
1-egg
4- green onions finely chopped
2-TBS. veg.oil
1/2 tsp. salt

Cook noodles and drain, lay on wax paper.
In a 2 qt. sauce pan heat oil, onion and broccoli about 5 min. stirring frequently.
Preheat oven to 375 degrees.
Remove from heat, stir in ricotta- parmesan -salt and egg.
Spread mixture on noodles and roll up.
Mix spaghetti sauce with 1/2 cup water.
Arrange seam side down , pour sauce over top cover loosly with foil.
Bake 30 min.

This is a recipe my Mother taught me to make I dont know where it originated from , she shared this with me when my kids were young and still at home ,it is something the whole family loved!

I have had it on my mind lately and decided to make it for Sunday dinner!

It is easy to make and only took about an hour to prepare.

Granddogs! (Roxy the Westie & Larry the Schnauzer)











I Hope The Easter Bunny Has A Warm Coat!















Just when I thought spring was in the air we are going to have record low's tonight!
The weather man is talking about a record low of 25 degrees and I'm dreaming of sunshine and little one's in their Easter outfit's and eggs scattered about the green grass sitting outside and watching the children scurry about to get the next colored egg and wondering what's inside, then sitting in the grass dumping all the eggs out to see what they got! I'll never forget my Grandson a couple of years ago opening his eggs so excited and shouting green beens (jelly beans)!
This past weekend my youngest Daughter the Grandgirls and the Granddogs spent the day with me and we tie dyed t-shirts , my dear friend and co-worker Candy gave me a tie dye kit for my birthday we had so much fun!
I will be busy getting ready for two Easter celebrations the rest of the week.
So for now , Happy Easter Everybunny!
